Autumn Chicken, Green Bean and Butter Bean Casserole Recipe
Ingredients
- 1 Pack Chicken Thighs and Legs (organic if possible)
- 200 g Green Beans (trimmed)
- 1 Tin Butter Beans (rinsed)
- 1 Clove Garlic (sliced)
- 1 Teaspoon Paprika
- 200 ml Stock (vegetable or chicken)
- 1 Teaspoon Crushed Red Chilli
- 1 Handful Parsley (Chopped)
Cooking Instructions
- Prepare the chicken in a large bowl. Drizzle over olive oil, salt, pepper and paprika and mix well to coat
- Seal your chicken pieces in a hot frying pan or skillet with a little oil, once sealed, remove from the pan and set aside
- In the same pan, add your garlic and green beans green beans with a little more oil if needed
- Cook for 3-4 minutes until soft
- Add butter beans and crushed chilli, stir and cook for another 3-4 minutes
- Add stock and chopped parsley and mix well before placing your chicken pieces skin side up in the pan
- Cover and place in a pre-heated oven at 180 C for 20-25 minutes
- Serve with crusty bread, if you like
