Chicken and Vegetable Stir-Fry with Chili Bean Sauce Recipe

Ingredients

  • 2 Chicken breasts (Higher welfare and organic if possible)
  • 1 Red pepper (sliced)
  •  Tenderstem broccoli (chopped)
  • 2 Cloves Garlic (sliced)
  • 1 Tbsp Sweet chili sauce
  • 1 Tbsp Hoisin sauce
  • 1 Tbsp Soy sauce (organic if possible)
  • 2 Tsp Chili bean sauce
  • 1 Tbsp Ketchup
  • 1 Tsp Sesame oil
  • 2 Nests Medium egg noodles
  • 1 Red chili (deseeded and sliced)
  • 2 Spring onions (sliced, white and green parts separated)

Cooking Instructions

  1. Slice your chicken breast in to long strips, cover with salt, pepper and sesame oil. Add to a hot non stick pan or wok
  2. Place small pan of salted water on to boil and add egg noodles
  3. Cook the chicken for 3-5 minutes until starting to brown, add your chopped pepper, broccoli and garlic and stir to combine
  4. Add your sauce ingredients to a small bowl and stir. Once the chicken and vegetables are cooked to your liking, add the sauce to the pan and cook for 8 minutes or so
  5. Drain your noodles and add them back to the pan with a lid to steam
  6. Divide your noodles and serve your stir fry on top with sliced green onions and chili
