You’ll need:

Duck with Mango, Clove and Cinnamon Recipe

Ingredients

  • 2 Duck breasts (or 2 legs)
  • 1 large Mango (or two small sweet mangoes)
  • 1 tbsp Vegetable oil
  • 1 White onion (sliced)
  • 2 cloves of Garlic (grated)
  • 1 thumb size piece of Ginger, (grated)
  • 1 Lemon (juiced)
  • 2 Cloves
  • 1 stick of Cinnamon plus 1 teaspoon of ground cinnamon
  •  black pepper

Cooking Instructions

  1. Pre-heat your oven to 200°C
  2. Prepare your duck breast or leg by patting the skin dry with a paper towel and carefully scoring the skin.
  3. Rub the skin with cinnamon and black pepper.
  4. Fry the duck skin side down in a non-stick pan for 4-5 minutes, until golden. Seal the other side for 1-2 minutes until even.
  5. Place the duck in a roasting tin (preferably with a rack), and place in the oven for 15-18 minutes or until cooked to your liking with an impressive crispy skin. If using legs, check packet cooking times.
  6. Allow duck to rest while making your mango curry.
  7. In a shallow pan, heat your oil and gently fry your onions, garlic and ginger for 2-3 minutes.
  8. Add the lemon juice, cloves, cinnamon and mango pieces with a little water to loosen. Let this cook down gently for 4-5 minutes until looking smooth.
  9. Slice your duck breast into pretty looking slices.
  10. Serve the curry with steamed rice, place your duck on top for an impressive and delicious meal.
