Healthy Chickpea and Olive Salad Recipe
Ingredients
- 1 400g Tin of chickpeas
- 1 tsp Cumin seeds
- 1 tbsp Olive oil
- 10 Cherry tomatoes
- 2 Roasted mixed peppers
- 1 handful Baby spinach (washed)
- 10 Mixed olives
- 1/2 Lemon (juiced)
- 100 g Feta cheese (optional)
Cooking Instructions
- Drain and rinse chickpeas
- Add a tablespoon of olive oil to a small frying pan and gently heat the chickpeas through with the cumin seeds and a generous shake of black pepper
- Meanwhile, roughly chop the tomatoes, peppers, spinach and olive oil and mix thoroughly in a large bowl
- Allow the chickpeas to cool and add to mixing bowl
- Squeeze a generous helping of lemon juice into the salad and mix through
- Crumble over the feta if using
- Serve and enjoy or refrigerate in an airtight container for 2-3 days
