You’ll Need

Lamb Casserole with Lentils and Prunes Recipe

Ingredients

  • 300 g Lamb Chops
  • 1 Onion (chopped)
  • 2 Carrots (diced)
  • 3 sticks Celery (sliced)
  • 2 cloves Garlic (sliced)
  • 1 tbsp flour (use 1 tsp cornflour to make this gluten free)
  • 250 g Dried prunes (roughly chopped)
  • 400 g Tin Green lentils
  •  Fresh Thyme
  •  Olive oil, Salt, Pepper (the usual suspects)
  • 450 ml Vegetable stock

Cooking Instructions

  1. Preheat your oven to 160°C. Place an oven proof pan on the hob with a little oil and seal your meat. I like to leave chops whole, with the bone in and fat left on, but trim and debone if you like.
  2. Once the meat it sealed on both sides, remove from the pan and keep rest. Add chopped vegetables to the pan with salt, pepper and thyme. Slowly cook the vegetables down for 8-10 minutes.
  3. Once the vegetables are looking soft, add flour (or cornflour) and gently pour in stock in batches, stirring in-between to resolve any lumps.
  4. Once the stock is boiling, drain and rinse your lentils, add them to the pan and add your chopped prunes.
  5. Add a good compliment of salt and pepper, to your liking, place the lid on the pan and place it in the oven for 1 to 1.5hrs, leaving to rest for 10 minutes if you have time.
