Super Easy Mushroom Tagliatelle with Tahini Recipe

Ingredients

  • 240 g dried Tagliatelle pasta
  • 1 onion, finely chopped
  • 2 bulbs of garlic, finely chopped
  • 1 tbsp tahini
  • dash soy sauce
  • 300g chestnut mushrooms, sliced
  • handful of parsley chopped

Cooking Instructions

  1. Put a large pan of salted water on to boil
  2. Add chopped mushrooms to a large frying pan with a little oil and gently cook down to remove excess moisture
  3. After a few minutes, add your chopped onion and garlic and continue to cook down until softened
  4. Add pasta to boiling water and cook to packet instructions while gently sweating your onion and mushroom mix
  5. Once your pasta is al-dente, drain reserving half a cup of cooking water, and tip in to pan to combine with your mushrooms
  6. Stir through tahini, soy and a little of the pasta water to loosen the mix and continue to combine
  7. Divide between bowls and sprinkle with parsley, enjoy!
