Vegan Chickpea and Courgette Curry Recipe
Ingredients
- 1 400g tin Chickpeas
- 1 400g tin Chopped tomatoes
- 1 medium Courgette (diced)
- 1 Onion (finely chopped)
- 2 cloves Garlic (sliced)
- 1 thumb size peice Ginger (grated)
- 1 handful Coriander (roughly chopped)
- 2 tbsp Coconut cream
- 2 tsp Garam masala
- 1 tsp Cumin seeds
- 1 tsp Ground coriander
Cooking Instructions
- In a large pan sweat onions for 10 minutes until soft
- Add garlic, ginger, spices and continue heating through until fragrant
- Add tomato paste and stir through to combine with spices
- Pour in your chickpeas, chopped tomatoes and chopped courgette. Stir to combine and gently simmer for 10 minutes
